I sit at the bar at Coyote waiting for my 5:30 appointment to show up and I just can’t resist getting an order of the Hatch Green Chile Mac & Cheese. I know that this is a mortal sin after a great work out at Boot camp but I can’t help fall into temptation.
The 3 types of cheese will be withheld from me, until I come up with a ransom amount to get this recipe. The luscious mixture of dairy is only part of what makes this dish oh so amazing, along with the bacon, green peas, and breadcrumbs to make a crusty bite that takes you immediately to heaven. The Coyote’s Mac and Cheese is the best in the city different.
On a lighter and healthier note, I opted for my favorite salad, the chilled Hawaiian Walu, Hamachi and Ahi Tuna salad, perfect as usual, but I won’t go into detail on this one since I have already!
To top the night off was the new Sautéed Italian Mushroom & House Made Provolone Cheese Tortellini and what a meal this appetizer makes. 4 large house-made provolone tortellini swimming in roasted garlic mushroom jus with veal shank and a truffle essence. This is a delectable appetizer that is as hearty enough to split.
To most, Coyote Café is a treat, luxury and a onetime thing. I’m telling you that it doesn’t have to be. Sharing is caring on all fronts. I suggest you get your best friend, best work buddy or boyfriend/girlfriend and sit a the bar while Shawn and Quinn whip up great cocktails and you and enjoy a taste of the Coyote Café.
