Soharu’s Strawberry Mojito is treat from the gods. Fresh fruit and mint, brand name rum and a pretty girl with a pretty smile, all shaken not stirred.
A beautiful, attentive and highly knowledgeable bartender, Soharu, offered to make me drink , I declined I asked for a glass of water. As I drank the water, I couldn’t help myself and stare as Soharu was making classically muddled, fresh fruit and herb cocktails. I couldn’t resist. My attention is now in full effect.
I went for the Mojito. Like I said, I am a sucker for any fresh ingredients in my drink or to eat for that matter.
I was asked what kind of berry’s I preferred in the mojito, I knew this was going to be the start of a great relationship. I have enjoyed many wonderful and intuitive cocktails by this girl from days we worked at the Dragon Room, to elegant cocktails at Amavi. Well now the team of Starr and Soharu are taking on the Guadalupe District and the Railyard Restarurant.
In a mixer glass, cute up 3 small lime wedges into pieces
Splash a minimal amount of pure cane suger
4 to 6 sprigs of mint (preferably spearmint)
then add 3 chopped strawberries, or any fruit you wish to mix with mint, I like the mixture of strawberries and kiwi’s, to which Soharu added in some chopped kiwi
Muddle all this at the bottom of the glass to open up those oils in the mint and the juices of the limes, kiwi’s and strawberries.
Add Ice to the top of the glass and pour in 4 oz of fine rum, preferable a clear or lite rum of your choice.
Shake it vigorously, not in front of up with lame up and down motion but lift that cocktail like it’s a champion on your shoulder and which I hope you know is the key to any cocktail coming out perfect!
Pour into a tall glass and garish with a wedge of kiwi and a small strawberry on the glass rim.
