The Santa Fe VIP just recently had dinner at Epazote and is happy to report that Chef Olea’s creations went further then I ever imagined the flavors of Mexico could go. We started off with a traditional xuilacoche (a mushroom like fungus that grows on the ears of corn) blue corn in color.
Next we were surprised with a small cup of the days soup to taste and it was absolutely delicious. In a buttery broth, were chunks of dungeness crab with a sweet cream on top of the soup. This was truly the high light of the night, so I thought.
We then tried a small sample of the melted queso, with a mix of delightful mexican cheeses melted with roasted strips of pablano chile peppers, onions and homemade chorrizo. The flavors just bursted in all directions and incredibly well together.
thinking that this dinner couldn’t possibly get any better, out come the main entry. My shrimp entree was sauteed shrimp in a sort of pico de gallo salsa that is sweetend with agave necter.
